Plastic leaches chemicals over time, and ceramic can chip and do the same things. Stainless does none of that, and is easy to keep clean.

Plastic or ceramic, or even some glass can harbor bacteria, which is often the culprit for feline acne. Some ceramics and stonewear also contain harmful lead used in the kiln processing, these are harmful for pets.

Stainless steel is virtually impossible to chip, thereby bacteria will not build up in cracks, chips, etc. They still need to be cleaned and rinse on a regular basis though.
