(I use Iams Lamb and Rice as recommended by my Vet - Honey has to have bulk. I checked the ingredients and it does have corn in it...would freezing the food destroy any fungus if there was one???)

Unfortunately, there is no true way a consumer can detect the fungus in pet food (other than the pet suffering illness) but a good pet food manufacturer (plant) would be performing regular quality control, inspections, and testing batches to ensure the product is safe.
