What are the long-term effects of sucralfate for dogs?

None that I'm aware of (sucralfate doesn't absorb systemically).

That's what I had heard. I also heard that it could start affecting the absorbtion of nutrients from food. I wasn't sure if it was true or not.

It may decrease absorption of other oral medications, I'm not aware it decreases absorption of food nutrients.
