Hi Devon. How is your Mr. Riley doing? My Pinto, who could be a littermate to your cat, had a bout with UTI a couple months ago - almost identical circumstances to what you describe. He was on vet-prescribed Royal Canin special chow for a few days - cost $7.50 a lb; as I said, I could've fed the cat Maine lobster  Pinto and Q (the latter is nearly 14 and has never had a UTI) are currently and permanently on a less expensive but more available urinary tract health chow... which Nan has fed her UTI prone Siamese for awhile and which is approved by her longtime cat vet. The makers of this latter brand are global mega corp now (as is the originally Canadian "Royal Canin" brand) but started out in your and my part of the country (the Grain Belt!)and it can be bought in just about any super mkt... you're probably using it already... when we lived in Iowa and Nebraska, Nan and I fed our horses that brand of horse chow... I think this company makes a chow specifically for just about every species except maybe rhinos and Tibetan yaks  so you probably know the one I mean? (This is as close as I come to endorsing pet food brands... a temporary Austin vet insisted on the Royal Canin for a set number of days only so I don't count that as a recommendation.) Anyhow, hope your gato pintado is doing well.
