My cat is chewing EVERYTHING, he has always been a bit of a nibbler but the last month or so he has destroyed all my flip flops, my dresser knobs and several other things I am sure.
He is almost 2 years old. So I think teething is over isnt it? It is very annoying, if I spray him or say no in a firm voice he runs away for a second then comes right back. Now the shoes I can remove but my dresser knobs... well I kinda need them!!

Sounds like he's bored....
Not to sound like a broken record, but.....interactive cat toys, kitty tree or condo, more time spent with him in playtime and activity.

He has a kitten!!!
I know he is bored... I assumed the same... but really he doesn't play with toys, its almost like he thinks he is too cool. It's just play/hang with mommy thats all he wants!

Maybe he really needs to chew. Does he have fresh, dry chow available at all times? You might also try Whisker Lickins Tartar Control treats... give him several, one at a time, after his regular feeding or whenever he starts nibbling on something he shouldn't.
I had a cat many years ago (before there was cat chow or crunchy treats) that was fed mainly raw meat - we didn't know any better - and he developed serious gingavitis (sp?) when only about 2 years of age... The vet cured it with sulfa powder... no doubt there are better medications nowadays...
